  • 1 lb Ground Italian Sausage
  • 1 small Butternut Squash peeled and diced
  • 1 box Pasta (e.g., penne, rigatoni)
  • 1 tbsp Olive Oil
  • 2 cloves Garlic minced
  • 2 cups Spinach
  • 0.5 cup Chicken or Vegetable Broth
  • 0.25 cup Parmesan Cheese grated
  • Salt to taste
  • Black Pepper to taste

Cooking Steps

  • Cook pasta according to package directions, then drain and set aside.
  • Heat olive oil in a large skillet over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned; drain excess fat.
  • Add diced butternut squash and minced garlic to the skillet with the sausage. Cook until squash is tender, about 5-7 minutes.
  • Stir in spinach and chicken broth. Cook until spinach wilts and liquid reduces slightly.
  • Add cooked pasta to the skillet and toss to combine all ingredients. Season with salt and pepper to taste.
  • Serve immediately, garnished with grated Parmesan cheese.

Notes

For extra flavor, roast the butternut squash before adding it to the skillet.
