Ingredients
  

Main Ingredients

  • 1 can black beans, rinsed and drained
  • 1 cup rice White or brown rice can be used.
  • 1/2 pound sausage, sliced Any preferred sausage type.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Spices and Seasoning

  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste Salt and pepper

Liquids

  • 2 cups chicken or vegetable broth
  • as needed Olive oil for cooking

Instructions
 

Cooking

  • In a large pot, heat olive oil over medium heat.
  • Add the chopped onion and sauté until translucent.
  • Add garlic and sausage, and cook until the sausage is browned.
  • Stir in the cumin, paprika, salt, and pepper.
  • Add the rice and stir to coat with the spices.
  • Pour in the broth and bring to a boil.
  • Reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.
  • Stir in the black beans and cook for an additional 5 minutes until heated through.
  • Serve warm, adjusting seasoning as needed.

Notes

For a vegetarian version, substitute the sausage with plant-based sausage or omit it. You can also add additional vegetables like bell peppers or corn for enhanced flavor.
