Ingredients
  

Dry Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup unsalted butter softened
  • 1 1/2 cups light brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract

For Rolling

  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, 1/2 teaspoon cinnamon, and salt.

Mixing

  • In a large bowl, cream together the softened butter, brown sugar, and 1/2 cup granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Baking

  • In a small bowl, combine 1/4 cup granulated sugar and 1 tablespoon cinnamon for rolling.
  • Scoop dough into 1-inch balls, roll each in the cinnamon-sugar mixture, and place on prepared baking sheets.
  • Bake for 8-10 minutes, or until the edges are golden brown and the centers are still soft.
  • Let cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For extra chewiness, underbake the cookies slightly. Store in an airtight container at room temperature for up to 3-4 days.
