Cajun Chicken Pasta

This creamy and spicy Cajun Chicken Pasta is a flavorful dish featuring tender chicken, a rich sauce, and perfectly cooked pasta, all seasoned with vibrant Cajun spices.

Ingredients
  

Chicken

  • 1.5 lbs Chicken breast boneless, skinless, cut into 1-inch pieces
  • 2 tbsp Cajun seasoning

Pasta

  • 12 oz Fettuccine or penne pasta
  • 1 tbsp Olive oil

Sauce

  • 2 tbsp Butter
  • 1 Onion medium, chopped
  • 3 cloves Garlic minced
  • 1 Red bell pepper chopped
  • 1 Green bell pepper chopped
  • 1.5 cups Heavy cream
  • 1 cup Chicken broth
  • 0.5 cup Parmesan cheese grated
  • 1 tbsp Cajun seasoning
  • Salt and black pepper To taste

Instructions
 

Preparation

  • Season chicken pieces with 2 tablespoons of Cajun seasoning. Chop onion and bell peppers, and mince garlic.

Cook Pasta

  • Cook pasta according to package directions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Cook Chicken

  • Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook until browned and cooked through. Remove chicken and set aside.

Sauté Vegetables

  • In the same skillet, melt butter. Add chopped onion, red bell pepper, and green bell pepper. Sauté until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.

Make Sauce

  • Stir in 1 tablespoon of Cajun seasoning, chicken broth, and heavy cream. Bring the mixture to a simmer, then reduce heat to low and stir in Parmesan cheese until melted and the sauce thickens slightly.

Combine

  • Return cooked chicken to the skillet with the sauce. Add the cooked pasta and toss to combine. If the sauce is too thick, add some reserved pasta water until desired consistency is reached.

Serve

  • Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.

Notes

For an extra kick, add a pinch more cayenne pepper to the sauce. Garnish with fresh parsley or green onions.
