  • 1.5 lbs large shrimp, peeled and deveined, tails on or off
  • 3-4 ears fresh corn shucked and cut into 1-inch thick rounds, or 2 cups frozen corn (thawed)
  • 1/2 cup unsalted butter
  • 6-8 cloves garlic, minced
  • 2-3 tablespoons Cajun seasoning (adjust to your spice preference)
  • 1/2 lemon lemon, juiced
  • 2 tablespoons fresh parsley or cilantro, chopped (for garnish)
  • 1 tablespoon olive oil
  • Salt & Pepper To taste

  • Pat the peeled and deveined shrimp dry with paper towels.
  • If using fresh corn, shuck and cut into rounds; if frozen, thaw thoroughly.
  • Mince the garlic and chop the fresh herbs.
  • Heat olive oil in a large skillet over medium-high heat. Add corn and cook for 3-5 minutes until lightly charred, then remove and set aside.
  • Reduce heat to medium, melt butter in the skillet, then add minced garlic and cook for 1 minute until fragrant.
  • Stir Cajun seasoning into the butter and garlic mixture and let it infuse for 30 seconds.
  • Add shrimp to the skillet in a single layer and cook for 2-3 minutes per side until pink and opaque.
  • Return corn to the skillet with shrimp, squeeze in lemon juice, and gently toss to coat everything in the sauce.
  • Remove from heat, stir in fresh herbs, and serve immediately.

Notes

For best results, ensure shrimp are patted dry before cooking to achieve a better sear. Adjust Cajun seasoning to your preferred spice level, and be careful not to overcook the shrimp, as they can become tough.
