  • 1 pound smoked sausage sliced
  • 2 teaspoons cajun seasoning
  • 1 large bell pepper diced
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1.5 cups chicken broth
  • 0.5 cup heavy cream
  • 0.5 cup parmesan cheese grated
  • 12 ounces pasta such as penne or fettuccine
  • 2 tablespoons fresh parsley chopped for garnish

Cooking Steps

  • Cook pasta according to package directions, then drain and set aside.
  • In a large skillet, brown sliced smoked sausage over medium-high heat. Remove sausage and drain excess fat.
  • Add bell pepper and onion to the skillet; cook until softened, about 5-7 minutes. Stir in minced garlic and Cajun seasoning, cooking for another minute until fragrant.
  • Pour in chicken broth and heavy cream, bringing the mixture to a simmer. Stir in grated Parmesan cheese until melted and the sauce thickens slightly.
  • Return the cooked sausage and pasta to the skillet, tossing to coat everything evenly with the sauce. Garnish with fresh parsley before serving.

Notes

For extra heat, add a pinch of cayenne pepper with the Cajun seasoning. If you don't have smoked sausage, kielbasa or andouille sausage can be used as a substitute.
