  • 0.5 cup mozzarella cheese shredded
  • 2 ounces cream cheese softened
  • 0.25 cup fresh parsley chopped for garnish
  • salt to taste

  • Cook spaghetti according to package directions until al dente, ensuring to reserve 1 cup of pasta water before draining.
  • While pasta cooks, melt butter in a large skillet over medium heat, then add minced garlic and sauté for 1 minute until fragrant.
  • Pour in heavy cream, bring to a simmer, then stir in Parmesan, mozzarella, and cream cheese until melted and smooth.
  • Add cooked and drained spaghetti to the skillet, tossing to coat evenly with the sauce, and gradually add reserved pasta water until the desired consistency is reached.
  • Season with salt and pepper to taste, then garnish with fresh parsley and extra Parmesan before serving.

Notes

For an extra kick, add a pinch of red pepper flakes with the garlic. Ensure all cheeses are at room temperature for a smoother sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently with a splash of milk or water.
