  • 1 (15 oz) pure pumpkin puree not pumpkin pie filling
  • 1 box (15.25 oz) spice cake mix
  • 2 large eggs

Preparation

  • Preheat oven to 350°F (175°C) and grease and flour a 9x13 inch baking pan or a 9-inch round pan.
  • In a large bowl, combine the pumpkin puree, spice cake mix, and eggs.
  • Gently mix with a spoon or electric mixer on low speed until just combined, being careful not to overmix.
  • Pour the batter into the prepared pan and spread it evenly.
  • Bake for 25-30 minutes for a 9x13 inch pan, or 30-35 minutes for a 9-inch round pan.
  • Check for doneness by inserting a toothpick into the center; it should come out clean or with moist crumbs.
  • Cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.

Notes
