Classic BBQ Salmon Bowls with Mango Avocado Salsa

Ingredients
  

For the BBQ Salmon

  • 4 (about 6 oz each), skin on or off Salmon fillets
  • 2 tablespoons BBQ rub
  • 1 tablespoon Olive oil

For the Mango Avocado Salsa

  • 1 large, peeled and diced Ripe mango
  • 1 large, ripe, peeled, pitted, and diced Avocado
  • 1/4 cup, finely diced Red onion
  • 1/4 cup, chopped Fresh cilantro
  • 1 juiced (about 2 tablespoons) Lime
  • 1/2 finely diced, seeds removed Jalapeño (optional)
  • Salt and black pepper To taste

For the Bowls

  • 4 cups (about 1 cup per bowl) Cooked rice or quinoa

Instructions
 

Prepare the Salsa

  • Combine diced mango, avocado, red onion, chopped cilantro, and lime juice in a medium bowl, adding jalapeño if desired.
  • Gently toss, season with salt and pepper to taste, then set aside to allow flavors to meld.

Season the Salmon

  • Pat salmon fillets dry with paper towels, brush with olive oil, then generously sprinkle BBQ rub on both sides of each fillet.

Cook the Salmon (Grill or Pan-Sear)

  • For grilling, preheat to medium-high (400°F/200°C), then grill salmon skin-side down for 4-6 minutes, flip, and cook for another 3-5 minutes until it flakes easily or reaches 145°F (63°C).
  • For pan-searing, heat a large non-stick skillet over medium-high heat, add oil if needed, then cook salmon skin-side down for 5-7 minutes until crispy, flip, and cook for another 3-5 minutes until cooked through.

Assemble the Bowls

  • Divide cooked rice or quinoa evenly among four serving bowls, then top each bowl with a cooked BBQ salmon fillet.

Serve

  • Spoon a generous amount of Mango Avocado Salsa over each salmon fillet and serve immediately.

Notes

For extra flavor, marinate the salmon in white wine for 2 hours before adding the BBQ rub. Choose wild-caught salmon if possible for a richer flavor and higher omega-3 content.
