Classic Creamy Broccoli Casserole

  • 4-5 cups fresh broccoli florets cut into bite-sized pieces
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups milk whole or 2%
  • 1/2 cup chicken broth or vegetable broth
  • 2 cups sharp cheddar cheese freshly shredded
  • 4 oz cream cheese softened
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

For topping

  • 1 cup cracker crumbs or Panko breadcrumbs
  • 2 tablespoons melted butter for topping

Preparation

  • Steam or blanch the broccoli florets for 3-5 minutes until tender-crisp, then drain well.
  • Melt 1/4 cup butter in a large saucepan over medium heat; whisk in flour for 1-2 minutes to form a pale roux.
  • Gradually whisk in milk and chicken broth until the sauce thickens and gently simmers for 5-7 minutes.
  • Reduce heat to low, then stir in cheddar cheese, cream cheese, Dijon mustard, garlic powder, and onion powder until smooth; season with salt and pepper.
  • Gently fold the prepared broccoli into the cheese sauce until it is evenly coated.
  • Pour the broccoli mixture into a well-greased 9x13 inch baking dish.
  • Combine cracker crumbs and 2 tablespoons melted butter in a small bowl, then sprinkle this mixture over the casserole.
  • Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, until bubbly and golden brown.
  • Let the casserole rest for 5-10 minutes before serving to allow the sauce to set.

Notes

For extra flavor, you can add a pinch of smoked paprika to the cheese sauce. To make this casserole ahead of time, assemble it without the topping, cover, and refrigerate. Add the topping and bake when ready. This casserole is also great with a mix of cheeses, such as Gruyere or mozzarella along with the cheddar.
