  • 1 lb fresh shrimp peeled and deveined (tail-on or tail-off)
  • 2 medium-sized zucchini
  • 4 cloves garlic minced
  • 4 tbsp unsalted butter
  • 1 tbsp extra virgin olive oil
  • 2 tbsp fresh parsley chopped
  • 0.5 tsp red pepper flakes optional
  • Salt and black pepper to taste
  • 1 tbsp fresh lemon juice

Preparation

  • Wash and trim the zucchini, then use a spiralizer to create zoodles. Optionally, salt and drain the zoodles for 10-15 minutes to reduce water content, then pat them dry.

Cooking

  • Heat butter and olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using) and cook for 30 seconds until fragrant.
  • Add the shrimp to the skillet and cook for 2-3 minutes per side, or until they turn pink and opaque. Season with salt and black pepper, then remove the shrimp and set aside.
  • Add the prepared zoodles to the same skillet and cook for 2-3 minutes, gently tossing to coat them in the remaining garlic butter sauce. Avoid overcooking to prevent soggy zoodles.
  • Return the cooked shrimp to the skillet with the zoodles. Stir in the fresh parsley and fresh lemon juice.

Serving

  • Taste and adjust seasoning as needed. Serve immediately.
