  • Frozen peas
  • Frozen corn
  • Green beans Optional
  • Mushrooms Optional

Flavorful Liquids

  • Low-sodium chicken broth
  • Milk dairy or non-dairy, e.g., unsweetened almond or cashew milk
  • Heavy cream or half-and-half for richness, optional

The Creamy Factor

  • Flour or cornstarch for thickening, optional
  • Cream cheese or plain Greek yogurt for added creaminess and tang

  • Garlic minced

Instructions
 

Prep

  • Chop all vegetables as directed.

Combine & Cook

  • Add chicken, all chopped vegetables, garlic, chicken broth, thyme, poultry seasoning, salt, pepper, and bay leaf to the crockpot. Stir gently to combine.

Slow Cook

  • Cover the crockpot and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is cooked and vegetables are tender.

Shred the Chicken

  • Remove the cooked chicken, shred it with two forks, then return it to the crockpot.

Creamy Finish

  • In a small bowl, whisk milk with flour or cornstarch until smooth, then stir this mixture into the soup along with frozen peas, corn, and cream cheese or Greek yogurt. Stir until the creamy factor is melted and well mixed.

Simmer & Serve

  • Cook on HIGH for another 30 minutes until the soup thickens slightly and peas and corn are hot. Taste and adjust seasonings as needed.

Garnish & Enjoy

  • Ladle the soup into bowls and serve with your favorite toppings.

Notes

For a richer soup, do not skip the heavy cream or half-and-half. Adjust the amount of flour or cornstarch to achieve desired soup thickness. Serving suggestions include crusty bread or biscuits.
