  • 1 head fresh cauliflower cut into florets
  • whole head garlic
  • 1 tbsp olive oil for roasting garlic
  • 1/4 cup unsweetened almond milk or preferred milk
  • 2 tbsp light cream cheese
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Garnish (Optional)

  • Fresh chives or parsley

Instructions
 

Preparation

  • Preheat oven to 400°F (200°C). Prepare garlic by cutting off the top, drizzling with olive oil, wrapping in foil, and roasting for 30-40 minutes until soft, then cool and squeeze out the cloves.

Cooking

  • Steam cauliflower florets over boiling water for 10-15 minutes, or boil for 8-12 minutes, until very tender, then drain thoroughly.

Assembly

  • In a large bowl, combine the cooked cauliflower, roasted garlic, almond milk, and light cream cheese.
  • Blend the mixture until smooth and creamy using an immersion blender, food processor, or potato masher.

Finishing

  • Season with salt and black pepper to taste, ensuring it is well mixed.
  • Serve the mashed cauliflower warm, optionally garnished with fresh chives or parsley.

Notes

Adjust seasoning to your preference. For an even creamier texture, you can add a touch more cream cheese or a splash of warm milk. Leftovers can be stored in the refrigerator for up to 3 days.
