  • 4 (6-ounce) skin-on or skinless salmon fillets about 1-inch thick
  • 4 tablespoons unsalted butter
  • 4-5 cloves garlic
  • 1/2 cup heavy cream (or whipping cream)
  • 1/4 cup dry white wine (like Pinot Grigio or Sauvignon Blanc) or chicken/vegetable broth
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach roughly chopped
  • 1/2 lemon juiced, plus extra wedges for serving
  • 2 tablespoons fresh parsley chopped, for garnish
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions
 

Preparation

  • Pat the salmon fillets dry and season generously with salt and black pepper on both sides.
  • Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
  • Sear the salmon fillets, skin-side down if applicable, for 4-5 minutes until crispy and golden brown.
  • Flip the salmon and cook for another 2-3 minutes until cooked through; then transfer to a plate and set aside.
  • Reduce heat to medium, add the remaining 2 tablespoons of butter to the skillet, and sauté minced garlic for 1 minute until fragrant.
  • Pour in white wine or broth, scraping up browned bits, and simmer for 1-2 minutes until slightly reduced.
  • Stir in heavy cream and Parmesan cheese, simmering on low until melted and smooth.
  • If using, add fresh spinach and cook until wilted, about 1-2 minutes.
  • Stir in fresh lemon juice and season with salt and pepper to taste.
  • Return salmon to the skillet, spoon sauce over each piece, garnish with parsley, and serve immediately with lemon wedges.

Notes

For best results, do not overcook the salmon; it should flake easily with a fork.
