  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons olive oil divided
  • 2 cloves garlic minced
  • 1 shallot large, finely chopped
  • 1/2 cup oil-packed sun-dried tomatoes drained and thinly sliced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese plus more for serving
  • 1/4 cup fresh basil chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 teaspoon red pepper flakes optional
  • Salt and black pepper to taste

  • Cook fettuccine according to package directions until al dente, reserving 1 cup of pasta water before draining.
  • Heat 1 tablespoon of olive oil in a large skillet over medium heat, then sauté minced garlic and chopped shallot for 2-3 minutes until fragrant and softened; set aside.
  • Add the remaining 1 tablespoon of olive oil to the skillet, then sear seasoned, patted-dry shrimp for 1-2 minutes per side until pink and opaque; remove and set aside.
  • Return the garlic and shallots to the skillet, add sliced sun-dried tomatoes, sauté for 1 minute, then pour in chicken broth and simmer, scraping up any browned bits.
  • Stir in the heavy cream and red pepper flakes, bring to a gentle simmer, and cook for 3-5 minutes until the sauce slightly thickens.
  • Add the cooked pasta to the skillet, toss to coat, and stir in Parmesan cheese until melted and smooth, adding reserved pasta water if the sauce is too thick.
  • Gently fold in the seared shrimp, chopped basil, and chopped parsley, then season with salt and pepper to taste.
  • Serve immediately, optionally garnished with additional Parmesan cheese.

Notes

For best flavor, use fresh Parmesan and good quality sun-dried tomatoes. Adjust red pepper flakes to your preferred spice level. Be careful not to overcook the shrimp, as they can become rubbery quickly.
