  • 4 ounces White Cheddar Cheese grated
  • ½ cup Mayonnaise full-fat recommended
  • 4 ounces Diced Pimentos well-drained
  • 2 ounces Cream Cheese softened
  • 1 teaspoon Dijon Mustard
  • ½ teaspoon Worcestershire Sauce
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Onion Powder
  • ¼ teaspoon Cayenne Pepper or more, to taste
  • Salt to taste
  • Black Pepper to taste

  • Grate the sharp and white cheddar cheeses finely if they are not already shredded.
  • In a medium bowl, combine mayonnaise, softened cream cheese, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, and cayenne pepper.
  • Stir until the mixture is smooth and creamy, then gently fold in the well-drained diced pimentos and all shredded cheeses, mixing until just combined.
  • Taste and season with salt and black pepper as needed, adding more cayenne for a spicier kick.
  • Cover the bowl tightly and refrigerate for at least 30 minutes to allow the flavors to meld, then serve chilled.

Notes

For best results, allow the pimento cheese to chill for at least an hour to truly deepen the flavors. You can serve this spread with crackers, celery sticks, or as a delicious sandwich filling.
