Classic Slow Cooker Chicken Tortilla Soup

This classic slow cooker chicken tortilla soup is incredibly easy to make and packed with flavor. Simply combine all ingredients in your slow cooker for a comforting and hearty meal.

Ingredients
  

Main Ingredients

  • 1.5-2 lbs boneless, skinless chicken breasts or thighs
  • 1 (15-oz) can diced tomatoes, undrained
  • 1 (15-oz) can black beans, rinsed and drained
  • 1 cup frozen corn
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 (4-oz) can diced green chiles, undrained
  • 4 cups chicken broth

Spices & Seasoning

  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper optional, for heat
  • Salt and black pepper to taste

Finishing Touches

  • 2 tbsp Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped plus more for garnish

Instructions
 

Preparation

  • Place chicken at the bottom of the slow cooker, then add tomatoes, black beans, corn, onion, garlic, and green chiles over the chicken.

Cooking

  • Pour in chicken broth and sprinkle chili powder, cumin, smoked paprika, and cayenne pepper over the ingredients, then season with salt and pepper.
  • Cook on LOW for 6-8 hours or HIGH for 3-4 hours until the chicken is cooked through and easily shreds.

Finishing

  • Remove and shred the cooked chicken with two forks, then return it to the pot.
  • Stir in fresh lime juice and chopped cilantro, then taste and adjust seasoning as needed before serving.

Notes

This soup is even better the next day! You can adjust the level of spice by adding more or less cayenne pepper. Serve with your favorite toppings like crushed tortilla chips, sour cream, avocado, or shredded cheese.
