  • 1/2 cup vanilla protein powder
  • 2-3 tablespoons maple syrup or honey, erythritol, stevia drops, adjusted to taste
  • 1/4 cup almond butter or peanut butter, cashew butter
  • 1 teaspoon vanilla extract
  • 1/2 cup oat flour or finely ground oats, plus more as needed
  • 1/4 cup mini chocolate chips optional

  • In a food processor, combine cottage cheese, vanilla protein powder, maple syrup, almond butter, and vanilla extract; blend until completely smooth and creamy.
  • Transfer the mixture to a bowl, then gradually mix in the oat flour until it forms a thick, rollable consistency.
  • Gently fold in the mini chocolate chips if desired.
  • Dampen your hands and roll 1 tablespoon portions of the mixture into smooth balls, placing them on parchment-lined paper.
  • Refrigerate the balls for at least 30-60 minutes to allow them to firm up before serving.

Notes

Adjust sweetener to taste and ensure the mixture is firm enough to roll by adding more oat flour if needed. These protein balls are a great make-ahead snack for meal prep.
