Creamy Caramelized Onion Pasta

Ingredients
  

Pasta

  • 300 g pasta such as fettuccine or spaghetti

Caramelized Onions

  • 2 large onions thinly sliced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp sugar

Sauce

  • 3 garlic cloves minced
  • 0.5 cup dry white wine optional
  • 1 cup vegetable broth
  • 0.75 cup heavy cream
  • 0.5 cup Parmesan cheese grated, plus more for serving
  • 1 tbsp fresh thyme chopped
  • salt and black pepper to taste

Instructions
 

Caramelize Onions

  • Heat butter and olive oil in a large pan over medium-low heat. Add sliced onions and cook, stirring occasionally, for 30-40 minutes until deeply golden brown and soft. Stir in sugar during the last 10 minutes to aid caramelization.

Cook Pasta

  • While onions are caramelizing, cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.

Make Sauce

  • Add minced garlic to the caramelized onions and cook for 1 minute until fragrant. Pour in white wine (if using) and deglaze the pan, scraping up any browned bits. Stir in vegetable broth and bring to a simmer.

Combine and Serve

  • Stir in heavy cream, Parmesan cheese, and fresh thyme. Add the cooked pasta to the sauce and toss to combine, adding reserved pasta water as needed to reach desired consistency. Season with salt and pepper to taste and serve immediately with extra Parmesan.

Notes

For a richer flavor, you can use a splash of balsamic vinegar with the sugar during caramelization. If you don't have white wine, simply omit it and proceed with the broth.
