  • 2 cups cucumbers, sliced Make sure to slice thinly for better texture.
  • 2 cups carrots, grated Grating helps them blend well with cucumber.

Dressing Ingredients

  • 1 cup sour cream or Greek yogurt Greek yogurt is a healthier option.
  • 2 tablespoons vinegar (white or apple cider) Adjust to taste.
  • 1 tablespoon olive oil
  • 1 teaspoon sugar Adjust to taste.
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish (optional)

Preparation

  • In a large bowl, combine the sliced cucumbers and grated carrots.
  • In a separate small bowl, whisk together the sour cream (or Greek yogurt), vinegar, olive oil, sugar, salt, and pepper until smooth.
  • Pour the dressing over the cucumber and carrot mixture and toss until well coated.
  • Chill in the refrigerator for at least 30 minutes before serving.
  • Garnish with fresh dill or parsley if desired.

Notes

Store any leftover salad in an airtight container in the refrigerator. It will stay fresh for up to 2 days. Best consumed within the first day for maximum crispness.
