  • 14 ounces smoked sausage sliced
  • 12 ounces pasta fettuccine, penne, or bow tie
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped
  • salt to taste
  • black pepper to taste

Preparation

  • Cook pasta according to package directions, then drain and set aside.
  • In a large skillet, brown the sliced smoked sausage over medium-high heat for 5-7 minutes; remove and set aside, leaving rendered fat in the skillet.
  • Add butter to the skillet, melt it, then sauté chopped onion for 3-5 minutes until softened.

Cooking

  • Stir in minced garlic and cook for 1 minute until fragrant. Gradually whisk in flour and cook for 1 minute, stirring constantly.
  • Slowly pour in chicken broth and heavy cream, whisking until smooth and thickened.
  • Return cooked sausage to the skillet, then stir in Parmesan cheese, chopped parsley, salt, and pepper.
  • Add cooked pasta to the skillet and toss to combine, ensuring all ingredients are evenly coated. Serve immediately and enjoy!

Notes

For extra flavor, consider adding a pinch of red pepper flakes with the garlic. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk or broth if needed to maintain creaminess.
