  • 4 cups vegetable broth
  • 1 cup milk
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped for garnish

  • In a large pot, melt butter over medium heat, then add diced carrots, celery, and onion, cooking for 5-7 minutes until softened.
  • Stir in minced garlic and cook for another minute until fragrant.
  • Sprinkle flour over the vegetables and stir for 1 minute to create a roux.
  • Gradually whisk in vegetable broth, then add diced potatoes, bringing the soup to a boil before reducing heat and simmering for 15-20 minutes until vegetables are tender.
  • Pour in milk, season with salt and pepper, and heat through without boiling.
  • Garnish with fresh parsley before serving.

Notes

For a richer flavor, you can use heavy cream instead of milk. Feel free to add other vegetables like peas or corn.
