  • 2 lbs potatoes peeled and diced
  • 4 cups chicken broth
  • 8 slices bacon cooked and crumbled
  • 8 oz cream cheese softened
  • 2 cups cheddar cheese shredded
  • 3 stalks green onions sliced
  • 0.5 cup milk
  • 1 tsp salt
  • 0.5 tsp black pepper

Preparation

  • Combine diced potatoes and chicken broth in a slow cooker, then cook on high for 3-4 hours or on low for 6-8 hours, until the potatoes are tender.
  • Once cooked, mash about half of the potatoes in the slow cooker to thicken the soup.
  • Stir in the softened cream cheese, milk, salt, and pepper until the cream cheese is fully melted and integrated.
  • Add most of the shredded cheddar cheese and half of the crumbled bacon, stirring until the cheese is melted and fully combined.

Serving

  • Ladle the soup into bowls and garnish with the remaining shredded cheddar cheese, crumbled bacon, and sliced green onions.

Notes
