Preparation

  • Peel and slice the cucumbers and carrots into thin matchsticks or rounds.
  • In a large bowl, combine the cucumbers and carrots.
  • In a small bowl, whisk together olive oil, apple cider vinegar, salt, black pepper, and paprika.
  • Pour the dressing over the vegetables and toss gently to combine.
  • Garnish with fresh herbs if desired.
  • Serve immediately or let it chill in the refrigerator for 10-15 minutes to enhance the flavors.

Notes

For extra crunch, add thin slices of radish or bell peppers. To make this salad heartier, consider adding chickpeas or avocado. For a sweeter dressing, add a teaspoon of honey or maple syrup.
