  • 6 cloves garlic minced
  • 2 cans chickpeas 15 oz each, drained and rinsed
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 2 medium carrots chopped
  • 2 medium celery stalks chopped
  • 1 can diced tomatoes 14.5 oz
  • 2 cups spinach fresh
  • salt to taste
  • black pepper to taste

Preparation

  • Heat olive oil in a large pot over medium heat, then add chopped onion, carrots, and celery and sauté until softened, about 5-7 minutes.
  • Stir in minced garlic and cook for another minute until fragrant.
  • Add vegetable broth, drained and rinsed chickpeas, and diced tomatoes to the pot, bringing the mixture to a simmer.
  • Reduce heat to low, cover, and let the soup simmer for 20 minutes to allow the flavors to meld.
  • Stir in fresh spinach and cook until wilted, about 2-3 minutes.
  • Season with salt and pepper to taste before serving hot.

Notes

For extra flavor, you can add a bay leaf to the soup while it simmers and remove it before serving. This soup also tastes great with a squeeze of fresh lemon juice at the end.
