Shrimp Filling

  • 1 pound shrimp fresh or frozen (thawed), peeled and deveined
  • 15 ounces ricotta cheese whole milk recommended for creaminess
  • 1/2 cup Parmesan cheese freshly grated
  • 1 cup mozzarella cheese shredded
  • large egg beaten
  • 1 cup fresh spinach chopped (optional)
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley chopped
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste

Lasagna Noodles

  • 10-12 lasagna noodles oven-ready or traditional (cooked al dente)

Sauce

  • 24 ounces marinara sauce homemade or high-quality store-bought
  • 1/4 cup heavy cream optional, for a richer sauce
  • 1/4 cup fresh basil chopped

  • Boil traditional lasagna noodles until al dente, then drain and rinse with cold water; oven-ready noodles do not require pre-boiling.
  • Sauté garlic, then cook and chop shrimp. In a large bowl, combine ricotta, Parmesan, mozzarella, egg, shrimp, spinach, parsley, lemon zest, salt, and pepper; mix thoroughly.
  • Lay noodles flat, spread shrimp filling evenly, and roll each noodle into a snug spiral.
  • Coat a 9x13 inch baking dish with marinara, arrange roll-ups seam-side down, cover with remaining sauce, and sprinkle with more mozzarella and Parmesan.
  • Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, until bubbly and golden.
  • Serve hot, garnished with fresh basil or parsley and an optional sprinkle of Parmesan cheese.

Notes

For best results, ensure your shrimp are fully thawed and patted dry before cooking. Don't overcook the shrimp in the filling step, as they will cook further in the oven. If using traditional lasagna noodles, cook them slightly under al dente to prevent them from becoming mushy during baking.
