Ingredients
  

Sweet Potato Rounds

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Feta Topping

  • 4 ounces feta cheese, crumbled
  • 2 ounces cream cheese, softened
  • 1 tablespoon fresh chives, minced
  • 2 tablespoons honey

Garnish

  • 1 tablespoon fresh parsley, chopped

Preparation

  • Preheat your oven to 400°F (200°C) and slice the sweet potatoes into 1/4-inch thick rounds, then toss them with olive oil, salt, and pepper.
  • Spread the seasoned sweet potato rounds in a single layer on a baking sheet lined with parchment paper.

Cooking

  • Roast the sweet potato rounds for 20-25 minutes, flipping them halfway through, until they are tender and slightly caramelized.
  • While the sweet potatoes roast, combine crumbled feta cheese, softened cream cheese, and minced chives in a small bowl, mixing until well combined.

Assembly

  • Once the sweet potato rounds are done, let them cool slightly, then top each with a spoonful of the feta mixture.
  • Drizzle honey over each topped sweet potato round and garnish with fresh chopped parsley before serving.

Notes

For extra flavor, try adding a pinch of red pepper flakes to the feta mixture. You can also roast the sweet potatoes with a sprinkle of smoked paprika for a different twist. These rounds are best served warm, but can also be enjoyed at room temperature for gatherings.
