Ingredients
  

Pasta and Vegetables

  • 250 g pasta
  • 1 zucchini diced
  • 2 bell peppers diced, any color
  • 250 g cherry tomatoes halved
  • 1 red onion sliced

Sauce and Topping

  • 400 g canned chopped tomatoes
  • 2 garlic cloves minced
  • 1 tsp dried oregano
  • 0.25 cup fresh basil chopped
  • 100 g feta cheese crumbled
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation

  • Preheat your oven to 200°C (400°F) and cook the pasta according to package directions until al dente.
  • While the pasta cooks, heat olive oil in a large pan over medium heat, then add zucchini, bell peppers, and red onion and sauté for 5-7 minutes until slightly softened.
  • Stir in minced garlic and cook for another minute until fragrant, then add chopped tomatoes, oregano, salt, and pepper and simmer for 10 minutes, allowing the sauce to thicken slightly.

Assembly and Bake

  • Drain the cooked pasta and add it to the vegetable sauce along with cherry tomatoes and fresh basil, stirring to combine all ingredients.
  • Transfer the pasta and vegetable mixture to a baking dish, sprinkle crumbled feta cheese evenly over the top, and bake for 15-20 minutes, or until the cheese is golden and bubbly.

Notes

For an extra touch of flavor, you can roast the vegetables before adding them to the sauce. This recipe is also great for meal prepping; simply divide into individual portions and refrigerate for up to 3 days.
