  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 large onion diced
  • 3 carrots peeled and sliced
  • 3 celery stalks sliced
  • 6-8 cups chicken broth
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 cups wide egg noodles add during the last 30 minutes of cooking
  • 1/4 cup fresh parsley chopped (for garnish)

  • Place the chicken breasts or thighs at the bottom of the Crockpot.
  • Add the diced onion, sliced carrots, and sliced celery over the chicken.
  • Pour in the chicken broth, ensuring all ingredients are mostly submerged.
  • Stir in the dried thyme, dried rosemary, bay leaf, salt, and black pepper.
  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until chicken is cooked through and vegetables are tender.
  • Remove the cooked chicken from the Crockpot, shred with two forks, and return to the soup. Discard the bay leaf.
  • During the last 30 minutes of cooking, stir in the wide egg noodles and cook until tender.
  • Taste and adjust seasonings as needed.
  • Ladle into bowls and garnish with fresh chopped parsley before serving. Serve with crusty bread.

Notes

For extra flavor, you can brown the chicken slightly before adding it to the Crockpot. This soup is perfect for meal prepping, as it reheats well and the flavors deepen overnight.
