Hearty One-Pot Ground Turkey & Vegetable Soup

  • 1 tablespoon olive oil
  • 1 pound lean ground turkey
  • 1 large onion chopped
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 2 cloves garlic minced
  • 1 (14.5 ounce) can diced tomatoes undrained
  • 6 cups chicken or vegetable broth
  • 1 teaspoon dried Italian seasoning (or a mix of oregano, basil, and thyme)
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 1 cup chopped spinach or kale (fresh or frozen)
  • 1/2 cup OR 1 cup small pasta (like ditalini, elbow macaroni, or orzo) OR cooked rice/quinoa (added at the end)

Cooking

  • Heat olive oil in a large pot over medium-high heat. Add ground turkey and cook until no longer pink, then drain excess fat.
  • Add onion, carrots, and celery to the pot and cook for 5-7 minutes until softened. Stir in minced garlic and cook for one minute until fragrant.
  • Pour in diced tomatoes and broth, then stir in Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for at least 15-20 minutes.
  • If using pasta, add and cook until al dente; if using rice or quinoa, stir in during the last 5 minutes. Stir in spinach or kale during the last 5 minutes until wilted.
  • Taste and adjust seasonings as needed, then ladle hot soup into bowls and serve immediately.

Notes

For a spicier kick, add a pinch of red pepper flakes with the Italian seasoning. To make this soup vegetarian, simply omit the ground turkey and use vegetable broth and a can of drained and rinsed cannellini or kidney beans for added protein. You can also vary the vegetables based on what you have on hand; green beans, zucchini, or bell peppers would also be delicious additions. This soup freezes well, making it great for meal prep!
