  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage or a mix
  • medium yellow onion chopped
  • 2 cloves garlic minced
  • 28 ounce crushed tomatoes
  • 15 ounce tomato sauce
  • 4 cups beef or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red pepper flakes optional, for a little kick
  • Salt and freshly ground black pepper to taste
  • 6-8 lasagna noodles broken into 1-2 inch pieces
  • 0.5 cup heavy cream or half-and-half
  • 1 cup fresh ricotta cheese
  • 0.5 cup grated Parmesan cheese plus more for serving
  • 1 cup shredded mozzarella cheese
  • Fresh parsley or basil chopped, for garnish

Cooking

  • Heat olive oil in a large pot. Brown the ground meat, breaking it up, then drain excess grease.
  • Add chopped onion to the pot and cook until soft; stir in minced garlic and cook for another minute.
  • Pour in crushed tomatoes, tomato sauce, and broth; stir in oregano, basil, red pepper flakes, salt, and pepper, then bring to a simmer.
  • Add broken lasagna noodles to the simmering soup and cook until al dente, stirring occasionally.
  • Stir in heavy cream, then dollop in ricotta cheese and gently stir until mostly melted.
  • Stir in Parmesan cheese until melted, then remove from heat and stir in mozzarella cheese until melted and gooey.
  • Ladle soup into bowls and garnish with extra Parmesan, parsley, or basil if desired.

Notes

For a richer flavor, use a mix of ground beef and Italian sausage. You can adjust the amount of red pepper flakes to your preferred spice level. If the soup becomes too thick, add a little more broth to reach your desired consistency. Serve with crusty bread for a complete meal.
