Honey Sriracha Glazed Salmon Bowls

  • 4-6 oz salmon fillets skin on or off
  • 2 tbsp honey
  • 1-2 tbsp sriracha adjust to taste
  • 1 tbsp low sodium soy sauce or Tamari for gluten-free
  • 1 tsp rice vinegar
  • 1 clove garlic, minced
  • 1/2 tsp fresh ginger, grated or minced
  • 1/2 tsp sesame oil
  • 1-2 tbsp olive oil or preferred cooking oil
  • Cooked grains brown rice, white rice, quinoa, farro, or cauliflower rice
  • Fresh vegetables edamame, shredded carrots, sliced cucumber, avocado, bell peppers, or steamed broccoli florets

Instructions
 

Prepare the Glaze

  • Whisk honey, sriracha, soy sauce, rice vinegar, garlic, ginger, and sesame oil in a small bowl until combined.

Coat the Salmon

  • Pat salmon fillets dry and brush about half of the glaze over them, reserving the rest for later.

Cook the Salmon (Choose your method)

  • Baking: Preheat oven to 400°F (200°C). Place glazed salmon on a parchment-lined baking sheet and bake for 12-18 minutes, brushing with reserved glaze during the last 5 minutes.
  • Pan-Searing: Heat 1-2 tbsp olive oil in a non-stick skillet over medium-high heat. Sear salmon skin-side down for 4-6 minutes, then flip and cook for 3-5 minutes, brushing with reserved glaze towards the end.

Assemble the Bowls

  • While salmon cooks, divide cooked grains among bowls and arrange fresh or cooked vegetables alongside.

Serve

  • Transfer salmon to each bowl. Drizzle remaining glaze over salmon and vegetables, then garnish with sesame seeds, green onions, or cilantro and serve immediately.

Notes

Adjust sriracha to your preferred spice level. For a richer flavor, marinate the salmon in the glaze for 15-30 minutes before cooking. Ensure salmon is cooked through but not overcooked to maintain moisture. The type of grains and vegetables can be customized to your preference and what's seasonally available.
