  • 1 onion diced
  • 3 garlic cloves minced
  • 28 oz crushed tomatoes
  • 4 cups beef broth
  • 6 lasagna noodles broken into pieces
  • 0.5 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 0.5 cup Parmesan cheese grated
  • 0.25 cup fresh basil chopped
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

  • Heat olive oil in a large pot over medium heat, then add ground beef and cook until browned, breaking it up with a spoon.
  • Drain any excess grease, then add diced onion and cook until softened, about 5 minutes.
  • Stir in minced garlic, salt, and pepper, and cook for another minute until fragrant.
  • Pour in crushed tomatoes and beef broth, bring the mixture to a simmer, then add the broken lasagna noodles.
  • Cook for 10-15 minutes, or until the noodles are al dente, stirring occasionally to prevent sticking.
  • Remove the pot from heat and stir in ricotta cheese, half of the mozzarella, and half of the Parmesan cheese.
  • Ladle the soup into bowls, garnish with the remaining mozzarella, Parmesan, and fresh basil, and serve hot.

Notes

For a richer flavor, use Italian sausage instead of ground beef. You can also add a touch of red wine with the tomatoes for extra depth. If you prefer a vegetarian option, simply omit the meat and add extra vegetables like mushrooms or zucchini. Adjust seasoning to taste and serve with a side of crusty bread for dipping.
