One-Pot Comfort Chicken Noodle Soup

  • 1 tablespoon Olive oil
  • 1 lb Chicken breast or thighs boneless, skinless
  • 1 medium Yellow onion chopped
  • 2 medium Carrots peeled and sliced or diced
  • 2 Celery stalks sliced
  • 3 Garlic minced
  • 6-8 cups Chicken broth low sodium preferred
  • 4-6 oz Dried egg noodles medium-wide work best
  • 1 Bay leaf
  • 1/2 teaspoon Dried thyme
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup Fresh parsley chopped, for garnish (optional)

Instructions
 

Preparation

  • Heat olive oil in a large pot or Dutch oven over medium heat. Sauté chopped onion, carrots, and celery until softened (5-7 minutes).
  • Stir in minced garlic and cook for 1 minute until fragrant. Add boneless, skinless chicken to the pot.

Cooking

  • Pour in chicken broth, add bay leaf, dried thyme, salt, and pepper. Bring to a boil, then simmer covered for 15-20 minutes until chicken is cooked.
  • Remove and shred chicken, then discard the bay leaf.
  • Return shredded chicken to the pot, add egg noodles, and cook for 8-10 minutes until tender.

Serving

  • Taste and adjust seasonings as needed. Ladle hot soup into bowls and garnish with fresh parsley, if desired.

Notes

For extra flavor, you can roast the chicken bones (if using bone-in chicken) before making the broth. Adjust the noodle cooking time based on package instructions for al dente or softer noodles. This soup freezes well without the noodles; add freshly cooked noodles when reheating. Feel free to add other vegetables like peas or spinach for added nutrition and color.
