  • 10 mini frozen pancakes
  • 1 pound pork sausage
  • 8 large eggs
  • half cup milk
  • 2 cups cheddar cheese (shredded)
  • 2 tablespoons maple syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Pancake Sausage Casserole

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • Arrange the mini frozen pancakes in a single layer on the bottom of the prepared baking dish.
  • In a large skillet, cook the pork sausage over medium heat, breaking it apart with a spoon until it's fully browned and crumbled. Drain any excess grease.
  • Sprinkle the cooked sausage evenly over the pancakes in the baking dish.
  • In a medium bowl, whisk together the eggs, milk, maple syrup, salt, and pepper until well combined.
  • Pour the egg mixture over the sausage and pancakes, ensuring everything is evenly coated.
  • Sprinkle the shredded cheddar cheese over the top of the casserole.
  • Bake for 30-35 minutes, or until the eggs are set and the casserole is golden brown and bubbly. Let it rest for a few minutes before serving.

Notes

For extra flavor, you can add a pinch of cayenne pepper to the egg mixture. This casserole can be assembled the night before and baked in the morning for a quick and easy breakfast.
