For the Pumpkin Brioche Dough:

  • Active Dry Yeast
  • Warm Milk
  • Granulated Sugar
  • All-Purpose Flour
  • Salt
  • Pumpkin Puree not pie filling
  • Unsalted Butter softened
  • Large Eggs
  • Pumpkin Pie Spice Blend

For Frying:

  • Vegetable Oil or Canola Oil

For the Maple Glaze:

  • Powdered Sugar
  • Maple Syrup pure, Grade A is best!
  • Milk or Cream
  • Vanilla Extract

Instructions
 

Step 1: Proof the Yeast

  • Activate the yeast by combining it with warm milk and a pinch of sugar, allowing it to bloom until foamy.

Step 2: Mix the Brioche Dough

  • Combine the proofed yeast mixture with flour, remaining sugar, salt, pumpkin puree, eggs, and pumpkin pie spice, then gradually incorporate the softened butter until a smooth dough forms.

Step 3: First Rise

  • Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size.

Step 4: Shape the Donuts

  • Roll out the risen dough and use a donut cutter to shape individual donuts and donut holes.

Step 5: Second Rise

  • Arrange the shaped donuts on a parchment-lined baking sheet, cover lightly, and allow them to undergo a second rise until puffy.

Step 6: Fry the Donuts until Golden

  • Heat vegetable or canola oil in a deep pot to the appropriate temperature, then carefully fry the donuts in batches until golden brown and cooked through.

Step 7: Prepare the Maple Glaze

  • Whisk together powdered sugar, pure maple syrup, milk or cream, and vanilla extract until a smooth and pourable glaze is achieved.

Step 8: Glaze the Pumpkin Spice Brioche Donuts

  • Once the fried donuts have cooled slightly, dip each one into the maple glaze, ensuring an even coating, and place on a wire rack to set.

Notes

For best results, ensure your yeast is fresh and active. Don't overcrowd the pot when frying to maintain oil temperature. The maple glaze sets quickly, so dip donuts while still warm but not hot.
