Chicken

  • 1.5 lbs boneless, skinless chicken thighs

The Honey Garlic Sauce

  • 1/2 cup low sodium soy sauce
  • 1/4 cup honey
  • 4 cloves garlic minced
  • 2 tbsp rice vinegar
  • 2 tbsp light brown sugar
  • 1 tbsp fresh ginger grated
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes (optional)

To Make it Thicker

  • 2 tbsp cornstarch
  • 2 tbsp cold water

For Serving

  • 3 cups cooked white rice
  • 2 green onions sliced
  • 1 tbsp sesame seeds

Instructions
 

Preparation

  • Pat the chicken thighs dry with paper towels; optionally, sear them in a hot pan with a little oil for 2-3 minutes per side until lightly browned.
  • In a medium bowl, whisk together the soy sauce, honey, minced garlic, rice vinegar, brown sugar, grated ginger, sesame oil, and red pepper flakes until well combined.

Cooking

  • Place the chicken thighs in the slow cooker and pour the honey garlic sauce evenly over them.
  • Cover the slow cooker and cook on LOW for 3-4 hours or HIGH for 2-3 hours, until the chicken is tender and cooked through (165°F/74°C).

Thickening & Serving

  • Remove the cooked chicken, shred or cut it into pieces; in a small bowl, whisk cornstarch and cold water to create a slurry, then gradually stir it into the sauce remaining in the slow cooker.
  • Cook the sauce on HIGH for an additional 15-20 minutes, stirring occasionally, until it thickens to your desired consistency.
  • Return the shredded chicken to the thickened sauce in the slow cooker and stir to coat evenly.
  • Serve the Honey Garlic Chicken over freshly cooked white rice, garnishing with sliced green onions and sesame seeds.

Notes

For best results, ensure the chicken reaches an internal temperature of 165°F (74°C). Searing the chicken beforehand is optional but adds depth of flavor and better texture. Adjust red pepper flakes to your preferred spice level.
