Ingredients
  

Bread

  • 1 large loaf day-old sturdy bread (like sourdough, challah, or French bread) about 1 pound, cut into 1/2-inch cubes.

Aromatics

  • 1 large yellow onion finely chopped
  • 3 celery stalks finely chopped
  • 4 cloves garlic minced

Fat

  • 1/2 cup unsalted butter

Herbs

  • 1/4 cup fresh sage chopped
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon fresh rosemary chopped
  • 1/4 cup fresh parsley chopped

Meat

  • 1 pound ground turkey (lean) browned

Broth

  • 3 cups low-sodium chicken broth

Eggs

  • 2 large eggs lightly beaten

Seasonings

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

Preparation

  • Spread bread cubes on a baking sheet and bake at 300°F (150°C) for 15-20 minutes until dry and lightly toasted, stirring once.
  • Melt butter in a large skillet over medium heat, then sauté chopped onion and celery for 8-10 minutes until soft.
  • Add minced garlic and cook for 1 minute until fragrant, then add ground turkey, breaking it up and cooking until no longer pink, seasoning lightly.

Assembly

  • Place toasted bread cubes in a large bowl, then add the cooked turkey and vegetable mixture along with fresh herbs, salt, and pepper.
  • In a separate medium bowl, whisk together the eggs and chicken broth to create the wet mixture.
  • Pour the broth and egg mixture over the bread mixture, then gently toss everything until all the bread is evenly moistened.

Baking & Serving

  • Spoon the stuffing into a greased 9x13-inch baking dish, cover with foil, and bake at 375°F (190°C) for 30 minutes.
  • Remove the foil and continue baking for another 20-30 minutes until the top is golden brown and crispy, and the internal temperature reaches 165°F (74°C).
  • Let the stuffing rest for 10 minutes before serving.

Notes

For extra flavor, consider adding a pinch of dried red pepper flakes to the aromatics, or a splash of white wine to deglaze the pan after browning the turkey. If you prefer a moister stuffing, you can add an additional 1/2 cup of chicken broth before baking.
