  • 1 lb lean ground turkey (93% or higher)
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper (any color) chopped
  • 1 cup corn (frozen or canned, drained)
  • 1 cup canned black beans rinsed and drained
  • 1 (14.5 oz) can diced tomatoes undrained
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste

  • Fresh cilantro chopped
  • 1/4 cup shredded cheddar cheese

  • Heat olive oil in a large skillet over medium-high heat and brown the ground turkey, breaking it apart with a spoon.
  • Drain any excess fat from the skillet, then add the chopped onion and minced garlic.
  • Sauté the onion and garlic for 3-5 minutes until the onion is softened and translucent.
  • Stir in the chopped bell pepper, corn, and black beans, cooking for 3-4 minutes.
  • Add the undrained diced tomatoes, chili powder, cumin, oregano, salt, and black pepper, stirring to combine.
  • Bring the mixture to a simmer, then cover and cook on medium-low for 10-15 minutes to meld flavors.
  • Taste the skillet and adjust seasonings as needed for your preference.
  • Serve hot, optionally garnished with fresh cilantro and shredded cheddar cheese.

Notes
