  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 cup pure maple syrup

Dry Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Apples & Spices

  • 2 cups Honeycrisp apples peeled, cored, and diced
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg

Optional Glaze Ingredients

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon pure vanilla extract

  • Peel, core, and dice the apples into 1/2-inch pieces.
  • In a large bowl, whisk together eggs, granulated sugar, vegetable oil, and pure maple syrup until smooth.
  • In a separate medium bowl, whisk together all-purpose flour, baking powder, baking soda, and salt.
  • Gently stir dry ingredients into wet until just combined. Fold in diced apples, ground cinnamon, and ground nutmeg until evenly distributed.
  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan, pour in batter, and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Cool the loaf in the pan for 10-15 minutes, then transfer to a wire rack to cool completely. For the glaze, whisk powdered sugar, milk, and vanilla extract until smooth, then drizzle over the completely cooled bread.

Avoid overmixing the batter to ensure a tender loaf. For best results, ensure apples are finely diced so they cook evenly within the loaf.
