  • 1 lb large crimini mushrooms
  • 8 oz spicy chorizo
  • 1/2 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic
  • 2 tbsp fresh parsley
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Preparation

  • Preheat your oven to 375°F (190°C), and line a baking sheet with parchment paper.
  • Heat olive oil in a skillet, then add chorizo and cook for 5-7 minutes until browned, draining excess grease.
  • Stir in chopped mushroom stems and minced garlic into the skillet with the chorizo mixture; sauté for 3-5 minutes until mushroom stems are softened.
  • Combine the cooked chorizo mixture, cream cheese, Parmesan, parsley, and black pepper in a bowl, mixing thoroughly.
  • Arrange mushroom caps on the prepared baking sheet and generously spoon the chorizo and cheese mixture into each cap.
  • Bake for 15-20 minutes, or until mushrooms are tender and the filling is golden and bubbly.
  • Garnish with fresh parsley before serving, if desired.

Notes

For an extra kick, add a pinch of red pepper flakes to the chorizo mixture. Make sure to drain the chorizo well to avoid greasy mushrooms.
