  • 20 oz pineapple chunks, drained
  • 2 bell peppers (red, green, or yellow), chopped
  • 1 medium onion, chopped

For the Sauce

  • 0.5 cup soy sauce
  • 0.25 cup brown sugar
  • 2 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp cornstarch
  • 2 tbsp water (for cornstarch slurry)

Preparation

  • Place chicken breasts, drained pineapple chunks, chopped bell peppers, and chopped onion into the slow cooker.
  • In a separate bowl, whisk together soy sauce, brown sugar, rice vinegar, minced garlic, and grated ginger to create the sauce.

Cooking

  • Pour the prepared sauce over the ingredients in the slow cooker, ensuring everything is well coated.
  • Cover the slow cooker and cook on low for 4-6 hours, or on high for 2-3 hours, until the chicken is tender and cooked through.
  • Once cooked, remove the chicken and shred it using two forks.
  • In a small bowl, mix cornstarch with water to create a slurry; stir it into the sauce in the slow cooker to thicken.
  • Return the shredded chicken to the slow cooker and stir to combine with the thickened sauce.

Serving

  • Serve the Sweet Hawaiian Crockpot Chicken over cooked rice, garnished with sliced green onions if desired.

Notes

Adjust the amount of brown sugar to your sweetness preference. For a spicier kick, add a pinch of red pepper flakes to the sauce. This recipe is also great with boneless, skinless chicken thighs.
