  • 1.5 - 2 lbs boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • 1 yellow onion chopped
  • 2 cloves garlic minced
  • 1 cream of chicken soup (condensed) (10.5 oz) can
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream (or half-and-half)
  • 1 tsp dried Italian seasoning
  • 1/2 tsp paprika
  • Salt and freshly ground black pepper to taste
  • Fresh parsley chopped (for garnish, optional)

Preparation

  • Heat olive oil in a large skillet over medium-high heat, then season chicken thighs or breasts with salt and pepper.
  • Sear chicken for 3-4 minutes per side until golden brown, then remove and set aside.
  • In the same skillet, sauté chopped onion for 3-5 minutes until softened, then add minced garlic and cook for another minute.
  • Transfer sautéed onion and garlic to the slow cooker and place seared chicken on top.
  • Whisk together condensed cream of chicken soup, chicken broth, Italian seasoning, paprika, and a pinch of salt and pepper in a bowl.
  • Pour the soup mixture evenly over the chicken in the slow cooker.
  • Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is fork-tender.
  • Stir in the heavy cream (or half-and-half) about 30 minutes before serving.
  • Optionally, remove and shred the chicken with two forks, then return it to the sauce for easier serving.
  • Garnish with fresh parsley, if desired, and serve hot.

Notes

For best results, do not skip the initial browning of the chicken, as it adds significant depth of flavor to the dish. Adjust seasoning to your preference.
