  • 5-6 oz drained canned salmon (wild-caught recommended)
  • 2 tablespoons Greek yogurt
  • 1/4 cup chopped cucumber
  • 2 tablespoons chopped red onion
  • 2 tablespoons chopped Kalamata olives
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon crumbled feta cheese
  • 1 teaspoon red wine vinegar or to taste
  • Salt and black pepper to taste

For Serving

  • 2 slices focaccia bread or pita bread
  • Fresh lettuce leaves for serving

Instructions
 

Preparation

  • Drain the canned salmon thoroughly, then transfer it to a bowl and flake it with a fork, removing any bones or skin if desired.
  • Add Greek yogurt, chopped cucumber, red onion, Kalamata olives, fresh oregano, crumbled feta cheese, and red wine vinegar to the flaked salmon.
  • Gently mix all ingredients until well combined, being careful not to overmix.
  • Season the salmon mixture with salt and black pepper to taste, adjusting as needed.

Assembly and Serving

  • Lightly toast the focaccia bread if desired.
  • Spread the salmon mixture generously onto one slice of focaccia bread, then top with fresh lettuce leaves.
  • Place the second slice of focaccia bread on top to complete the sandwich.
  • Cut the sandwich in half and serve immediately.

Notes

For an extra tang, a squeeze of fresh lemon juice can be added to the salmon mixture. If using pita bread, warm it before filling for a softer texture.
